The Clevedon's Spanish Veggie Sausages
Aren’t sausage links the perfect, portable treat? There are loads of options in supermarkets these days, so you’ll be spoilt for choice. If you want to try a winning combo, Good Housekeeping found the Co-op Spicy Whirl Corn Sausages were a clear winner. They said of the sausages, “These vibrantly coloured spiral pork sausages are filled with sweetcorn, roasted red and green peppers and chilli. Testers enjoyed the peppery and subtly smoky aroma, reminding them of a chorizo. There's the ideal amount of heat from the chilli too, with the peppers adding sweet and smoky flavours.” We love how they paired it with a simple rocket salad to complement the flavours.
However, you don’t have to be a meat eater to enjoy a good sausage. In fact, plant-based diets are on the rise globally. If you’d like to try to make a similar link at home that’s suitable for vegetarians, why not try this recipe from our head chef:
Ingredients
150g cannellini beans
130g red onion, diced
10g garlic, chopped
80g bread crumbs
80g oats
150g roasted red peppers, diced
10g parsley, chopped
5g thyme, chopped
1 medium egg
10g smoked paprika
5g salt
1tbsp Henderson’s relish
1bsp tomato paste
Serves 2-3 as part of a main meal
Method
Drain beans and add to bowl, mash with fork.
Sautee onion, garlic till just soft and not browned and add to bowl with beans.
Add all remaining ingredients and mix will.
Let sit for one hour before rolling into sausage links or adding to your sausage maker.
Use vegan casings, available in your local large supermarket or online.
Cook for 15-20 on a BBQ grill or pan.
Pair with a fresh salad or nachos with guacamole for a summery flavour.
Serve with a tall glass of iced tea or margarita on the rocks.
